Imagine looking back tomorrow and having made a difference today.
In June 2021, I reopened Gauthier Soho as a 100% vegan restaurant.
As human beings, our personal impact on the planet and towards the animals we share this world is more and more a daily discussion. What we choose to eat and drink is our own decision, and choosing plant-based is the most direct and powerful action you can make to directly affect the world more positively.
At Gauthier Soho I have decided to dedicate my kitchen’s creativity to helping form a new French gastronomy, through the classical techniques I was lucky enough to learn in my training. The only difference is I now choose to work without animal products.
In order for the world to begin healing itself we need to accept what global science is now agreed on. One of these harsh truths is there is no such thing as sustainable meat, fish or dairy. No amount of tree planting will greenwash this fact.
So I am proud to say that Gauthier Soho is the world’s first primary sustainable gastronomic restaurant, meaning that our carbon footprint is naturally very low because of the ingredients we choose to use (and not use) rather than the result of some dubious offsetting scheme.
I am so proud of my team and so happy to have such wonderful customers, old and new, who have decided to invest their lunches and dinners with us, weddings, anniversaries, dates, celebrations of all kinds. And more unexpectedly is the corporate world which has been so ahead of the game in demanding sustainable plant-based events and parties to demonstrate its willingness to operate compassionately. A really happy surprise. Thank you.
